After scrutinizing each years harvest, we feel that these coffees represent the best that each coffee growing origin has to offer. We carefully roast each selection to highlight its unique properties of acidity, body, and flavor. Our approach to roasting is further governed by our appreciation of the specific terroir from which they come as well as our respect for the farmers who have so carefully grown and prepared them. We want the coffee's character shine through in the cup, rather than overwhelm its nuance with roast. Coffees as good as these don't need to be darkly roasted to taste great. (That being said, you will find several of these coffees in our Dark Roast line an well as in our blends.)
